Mashed potatoes without butter and milk? This low calorie recipe uses low sodium chicken broth and trans fat free margarine to make quick and easy healthy mashed potatoes.

Ingredients

    • 2 lbs red potatoes, unpeeled and halved
    • 1/4 cup low sodium chicken stock
    • 2 Tbsp trans fat free margarine
    • 1/8 tsp salt
    • 1/8 tsp black pepper

Preparation

    • In a large saucepan, bring 2 cups water to a boil over medium-high heat. Add potatoes, cover and steam for about 10 to 12 minutes or until tender.
    • With a slotted spoon, transfer potatoes to a large bowl.
    • Add chicken stock and margarine. With a handheld mixer on medium speed, mash potatoes until chunky. Add salt and pepper. Stir gently to combine and serve.
