Wake up to this low sodium and low fat bread for breakfast!

Ingredients

    • 4 cups whole wheat flour
    • 1 tsp baking soda
    • 1 tsp salt
    • 2 tbsp brown sugar
    • 1/4 cup skim milk powder (optional)
    • 1/2 cup sunflower seeds or chopped nuts
    • 2 and 1/2 cup low fat yogurt
    • 2 tbsp sesame and/or poppy seeds

Preparation

    • Preheat the oven to 350°F. Use either a 9 5/8 by 5 1/2 inch pan or two 8 1/2 by 4 inch pans. Spray with nonstick spray.
    • In a large bowl, combine the flour, baking soda, salt, brown sugar and skim milk powder and stir until well blended.
    • Add the nuts or sunflower seeds and yogurt and stir just to moisten the dry ingredients. The dough will be very thick and stiff.
    • Spoon the batter into the loaf pan or pans. Smooth the top and sprinkle with the sesame and/or poppy seeds.
    • Bake until a cake tester comes out clean, about 35 to 45 minutes for the small loaves or 50 to 60 minutes for the large loaf.
